pre-opening (may 2018)

There definitely was not much time for celebrating birthdays since we were running up against a deadline for the opening of our restaurant. As in, only a few days to go!! We had endless sticky film to peel, appliances to unpack, beautiful but annoyingly intricate light fixtures to assemble, hiring to finalize, training to plan, schedules to post, and marketing to get underway. Luckily the entire family was on board, including wonderful extended family!!

Oh, but do not let the smiles fool you. Yes, it was fun and exciting and energizing (some of the time), but it was also exhausting and maddening, and a full-out emotional roller coaster. Hard truth.
